In Italy, white balsamic vinegar is a condiment. Made with white trebbiano grapes, it does not undergo the cooking and barrel aging process of other balsamic vinegars from Modena. It is pure, clean and delicately precious. The result is a crisp vinegar with a hint of sweetness. Extremely adaptable, it can be combined with any of our olive oils for vinaigrettes or marinades. The primary reson many people choose a white balsamic over a darker balsamic, is that the red or brown color may create undesirable appearance in lighter colored dishes.
